Filling and healthy, sweet potato is the perfect vegetable to star in this Vegetarian Taco dish.
This quick weeknight meal is easy to prepare earlier in the day and warm up just before serving. Adding the lightly roasted garam masala chickpeas brings more protein and a kick of spicey flavor to this comforting Taco.
Cut the sweet potatoes in large chunks before roasting to keep them perfectly cooked. The fresh lime juice lifts the deep flavors of the ground spices. Serve this meal with either naan bread or tortillas, a dollop of homemade guacamole and plain greek yogurt.
Sweet Potato Chickpea Tacos with Lime

Ingredients
- 1 tablespoon Olive oil or coconut oil
- 1 small onion cut in half and sliced
- 1 red bell pepper julienned
- 1 teaspoon salt
- 1 tablespoon Dipti's Garam Masala (or ¼ teaspoon of each ground cumin, coriander,cayanne pepper,black pepper, and turmeric.
- 2 medium sweet potatoes washed, dried and cut into large chunks with skin
- 1 can chickpeas, drained and rinsed
- 1 lime juiced
- 1 package tortillas or naan
- Homemade guacamole(see recipe on blog)
Instructions
- Preheat oven to 400
- Place sliced onion and pepper on baking sheet, coat with 1 teaspoon olive oil and ¼ teaspoon salt. Roast in oven for 12 minutes.
- Toss sweet potato with ¼ teaspoon olive oil ,1/4 teaspoon and ¼ teaspoon garam masala. Roast in oven for 25-30 minutes or until tender when forked.
- In the meantime heat a large fry pan for 1 minute on medium and add curry masala to roast for 30 seconds, add drained chickpeas and shake pan to coat. Add half of the juiced lime. Add the roasted onions, peppers and sweet potato. Sprinkle with the remaining garam masala toss to coat and add the rest of the lime juice. Season with salt.
- Serve with tortillas, or naan and a dollop of guacamole and plain yogurt.
